What You Will Need:

- 1 cup oat flour
- 1 1/2 cup regular oats
- 1 teaspoon ground cinnamon
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup natural peanut butter (Chunky or smooth)
- 1/3 cup maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (I used Milk chocolate Ghirardelli – Dark chocolate is great too!)
- 1 tbsp salted butter
- Pure Balance CBD Oil (I used 100mg of 2 50ml droppers of Full Spectrum)
Directions:

- Preheat oven to 350 degrees F.
- Make oat flour by adding 1 cup of regular oats to a food processor or blender. Blend until the oat turns into a flour.
- Put your oat flour and other dry ingredients into the large bowl. Add 1 ½ cups of regular oats, cinnamon, baking powder, baking soda and salt.
- In a medium bowl mix your wet ingredients: peanut butter, maple syrup, 1 egg and vanilla extract. Whisk and mix everything together.
- Mix the wet ingredients into the dry ingredients, using a spatula to fold all the ingredients together until thoroughly combined.
- Line 2 baking sheets with parchment paper or a silicone baking mat. Use a cookie scoop or a tablespoon to scoop out dough. Gently smash the cookies down. (You can set aside some cookie dough scoops to freeze for a later time.)
- Bake for 10 minutes.
- Remove from the oven and place on a cooling rack.
- In the meantime, put the chocolate chips in a small flat bowl with a tablespoon of butter.
- Place bowl in microwave for 20-30 second increments, stirring in between until chocolate is melted and smooth. You can also melt your chocolate using a double broiler – go slow and low. Don’t overheat the chocolate. Once the chocolate is melted, drop in your CBD oil and stir gently.
- Roll out a sheet of foil to set the chocolate dipped cookies on.
- Dunk the bottom half of each cookie in the CBD chocolate and place on the foil to cool. Drizzle any excess chocolate over the tops of the cookies.
- HINT: To cool quickly and eat faster place the chocolate dipped cookies in the refrigerator until chocolate hardens on the bottom of the cookie.
- When chocolate is hardened, transfer cookies to an airtight container and keep refrigerated for freshness. Chocolate peanut butter oatmeal cookies will keep well for a week if stored in the fridge.
