Love homemade cookies? So do we, and these soft and chewy peanut butter oatmeal cookies are C-B-Delicious! We gave this classic comfort cookie recipe an uplifting finish with a dip in a CBD chocolate bath.

Warm and soft oatmeal cookies, with gooey peanut butter dunked in creamy CBD chocolate – the perfect relaxing treat to gift a friend with. Oatmeal cookies are a joy for all to smell and taste, and this recipe comes with something extra, Pure Balance CBD oil!

This batch makes two dozen cookies so its great for sharing and rolling a few balls of dough to stash in the freezer for a later time! Put a few cookies in a bag and deliver to a friend for a thoughtful relaxing treat.

What You Will Need:

    • 1 cup oat flour
    • 1 1/2 cup regular oats
    • 1 teaspoon ground cinnamon
    • 3/4 teaspoon baking powder
    • 3/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup natural peanut butter (Chunky or smooth)
    • 1/3 cup maple syrup
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1/2 cup chocolate chips (I used Milk chocolate Ghirardelli – Dark chocolate is great too!)
    • 1 tbsp salted butter
    • Pure Balance CBD Oil (I used 100mg of 2 50ml droppers of Full Spectrum)
Baking with CBD

Directions:

    1. Preheat oven to 350 degrees F.
    2. Make oat flour by adding 1 cup of regular oats to a food processor or blender. Blend until the oat turns into a flour.
    3. Put your oat flour and other dry ingredients into the large bowl. Add 1 ½ cups of regular oats, cinnamon, baking powder, baking soda and salt.
    4. In a medium bowl mix your wet ingredients: peanut butter, maple syrup, 1 egg and vanilla extract. Whisk and mix everything together.
    5. Mix the wet ingredients into the dry ingredients, using a spatula to fold all the ingredients together until thoroughly combined.
    6. Line 2 baking sheets with parchment paper or a silicone baking mat. Use a cookie scoop or a tablespoon to scoop out dough. Gently smash the cookies down. (You can set aside some cookie dough scoops to freeze for a later time.)
    7. Bake for 10 minutes.
    8. Remove from the oven and place on a cooling rack.
    9. In the meantime, put the chocolate chips in a small flat bowl with a tablespoon of butter.
    10. Place bowl in microwave for 20-30 second increments, stirring in between until chocolate is melted and smooth. You can also melt your chocolate using a double broiler – go slow and low. Don’t overheat the chocolate. Once the chocolate is melted, drop in your CBD oil and stir gently.
    11. Roll out a sheet of foil to set the chocolate dipped cookies on.
    12. Dunk the bottom half of each cookie in the CBD chocolate and place on the foil to cool. Drizzle any excess chocolate over the tops of the cookies. 
    13. HINT: To cool quickly and eat faster place the chocolate dipped cookies in the refrigerator until chocolate hardens on the bottom of the cookie.
    14. When chocolate is hardened, transfer cookies to an airtight container and keep refrigerated for freshness. Chocolate peanut butter oatmeal cookies will keep well for a week if stored in the fridge.
