Immune Boosting Vegetable Herb Broth

This broth is perfect to sip on or turn into a soup if your immune system is feeling taxed. This broth recipe is packed with nutrients to soothe your tummy, throat and keep you warm inside. Add your choice of herbs and spices. Turn into a soup or sip on the warming broth when your body needs a wellness boost.

Ingredients

  • 3 large carrots
  • 1 large onion diced
  • 2 stalks celery plus celery heart
  • 1 knob ginger
  • 1 knob turmeric
  • 1 fennel bulb cut in half
  • 5 cloves garlic
  • 8 shitake mushrooms dried or fresh
  • Assorted herbs: Thyme, Bay leaf, Rosemary, Parsley, Lemon balm, Curry leaves.
  • sea salt, black pepper, cayenne pepper
  • water

 

Directions

Roughly chop large veggies in half to fit in a large stock pot and then cover with water. Place the pot on the stovetop with a lid on and bring to a boil. Once boiling reduce the heat to low and allow to simmer for approximately 5 hours. The longer you let it simmer, the more flavorful the broth will be. 

Check the broth every 45 minutes or so and top off with water as needed to keep veggies submerged. Turn off the heat and cool, then strain the broth through a fine-mesh sieve and discard vegetables. Sip on the veggie broth or use as a soup base.

Healing Bone Broth

This healing bone broth is incredibly nutritious and so good for your body, mind, and gut. There are many benefits to drinking bone broth, you can read about them Here. Making bone broth is simple, although it takes a good 15+ hours to cook. Once it is done, you can use it as the base of soups or sip on it plainly for its whole body healing benefits.

Ingredients

  • 3-4 pounds of beef bones cut in half by a butcher (use: oxtail, short ribs, knuckle bones with a little meat on them) 
  • 2 large carrots cut in half
  • 1 large onion quartered
  • Head of garlic
  • 2 celery stalks chopped
  • 1 medium leek chopped in large chunks
  • 2 bay leaves
  • Thyme
  • 2 tablespoons black peppercorn
  • 1 tablespoon cider vinegar

Directions

Preheat the oven to 450°F. Place beef bones, carrots, leek, onion, and garlic on a roasting pan and roast for 20 minutes. Toss and turn the contents and continue to roast about 20 minutes more until browned. Place all roasted bones and veggies into a large 6-quart pot or slow cooker. Add celery, bay leaves, peppercorns, and vinegar and cover with water.

Bring to a boil then reduce heat to a very low simmer and cook with lid slightly ajar. Cook for at least 10 hours but 24 hours is best. Check occasionally to skim foam or excess fat off the top. Add water if needed to keep veggies fully submerged.

(Do not leave the stovetop unattended. Turn off and resume cooking the next day if needed.)

When the bone broth is done cooking, allow to cool and pour through a fine-mesh sieve and discard bones and vegetables. Remove fat from the top once it has cooled in the fridge. Store in the fridge for up to 7 days or freeze.

Comforting Chicken and Tomato Broth

Chicken and Tomato broth is delicious, savory and nurturing, especially on a cold day. I love drinking the warm broth with some fresh herbs infused in it. This broth also makes a delicious base for a tortellini soup, or chicken noodle.

Ingredients

  • 4 onions
  • 6 cloves of garlic
  • 4 sticks of celery
  • 20 large ripe mixed-colour tomatoes 
  • 1 whole free-range chicken – fat trimmed off
  • 1 tablespoon tomato purée (optional)

Directions

Roughly chop onions, celery, garlic and tomatoes. Put veggies, chicken and tomato puree into a large stock pot. Cover the contents with water, pop the lid on, and bring to the boil over a high heat – cook for about 30 minutes.

Reduce to a simmer over low heat with the lid ajar and cook for 1 hour, or until the chicken is cooked through. Pull out the chicken with tongs and put aside. (Use the leftover chicken in another meal or turn it into chicken noodle soup!)

Pour the soup broth through a fine-mesh sieve, discarding what’s left behind. Taste test to check the flavor balance, and season with sea salt and black pepper, if needed.
