Fresh basil, spinach, and pine nut pesto can transform any bread, salad, sandwich, pasta dish, or pizza into a fresh flavorful Italian inspired meal. I love shopping at the farmers markets and gathering local summertime produce. Homemade pesto is one of my favorite ways to brighten up a meal with fresh green savory flavors and get in some CBD. This pesto is loaded with fresh spinach, it is vegan and gluten-free. You can use your CBD pesto to make dips, salad dressings, sandwich spreads or toss it over fresh pasta.

 

Spinach is one of my favorite leafy greens, and it is a superfood abundant in nutrients and high in fiber. Spinach has very little calories and is full of essential vitamins and minerals like calcium, iron, magnesium, potassium folate, vitamin C, and vitamin A. In this recipe, I used Pure Hemp Botanicals 3,000mg Full Spectrum CBD Oil Tincture, however, you can use any CBD tincture strength you prefer.

Gluten-free and Vegan Style

 

What You Will Need:

1/2 Cup of pine nuts toasted

3 Cups of baby spinach (Firmly packed)

½ Cup of fresh basil (Firmly packed)

2 Tablespoons of fresh lemon juice

1 Teaspoon of lemon zest

1 Teaspoon of Pure Hemp Botanicals 3,000mg CBD Oil Full Spectrum Tincture 

(approximately 10ml or 500mg of CBD)

1 small minced shallot

4-6 garlic cloves minced

1 Teaspoon of sea salt

1/4 Teaspoon of black pepper

1/2 Cup of olive oil

 

Directions:

  1. Preheat the oven to 350°F. Spread ½ cup of pine nuts onto a baking sheet and toast in the oven for about 7 minutes or until golden. 
  2. Chop up your fresh ingredients.
  3. In a food processor or blender place baby spinach, basil, toasted pine nuts, lemon juice, lemon zest, minced shallot, minced garlic, CBD oil, sea salt, and pepper.
  4. Pulse and blend a few times until ingredients break down.
  5. Drizzle in olive oil and stop to scrape the sides of the blender so everything mixes together evenly. 
  6. Toss over your favorite pasta, garlic bread, or make into a dip.
  7. Store in an airtight container in the refrigerator. Your fresh pesto will stay fresh for 2 days.
