Cucumber Salad Tips

• I like to use Persian cucumbers for this recipe because they are smaller in diameter, extra-crisp, and less seedy and watery. If you can’t find them, the second-best choice is English cucumbers, similar in texture.
• Don’t overdo the garlic in this recipe, or it will overwhelm the other flavors. I recommend using 1-2 small cloves of garlic.
• Using a basic balsamic vinegar is great for this recipe; you don’t need to use a thick or expensive balsamic.
• Serve this recipe immediately to avoid the avocado turning brown. This is not a recipe you want to refrigerate for later.
• You can also add more fresh ingredients to your cucumber salad, such as arugula, cherry tomatoes, and radish slices.
• Depending on how many servings you are making, you may want to add more CBD oil. I used 50mg in this recipe.
• CBD Cucumber salad is wonderful on its own and also tastes great on top of a thin slice of sourdough baguette.

Prep Time: 8 minutes
Servings: 3 – 4 servings

What You Need:
• 3 tablespoons extra-virgin olive oil
• 2 tablespoons balsamic vinegar
• 1 dropper of 50mg Pure Balance CBD Oil
• 1 small garlic clove pressed or minced
• Himalayan salt and freshly ground black pepper, to taste
• 1 ripe avocado, pitted and sliced or diced
• 4 Persian cucumbers or 2 medium English cucumbers, thinly sliced
• Optional additions: 1 cup of arugula, ½ cup halved cherry tomatoes, and/or 1 to 2 chopped radishes

Directions:
1. Whisk together the olive oil, balsamic vinegar, CBD oil, and garlic in a medium bowl.
2. Dice up the avocado and slice cucumbers thinly. Add in other veggies if you want, and toss to combine.
3. Season with salt and pepper and serve immediately.
