How to make Fresh Spring Rolls
Choose your filling of choice and prepare your noodles. Chop all of your vegetables into long, thin slices. Assemble all of your ingredients, including the shrimp or minced cooked meat, noodles, herbs, and rice paper wrappers.

What We used:
- 1 Mango
- 1 Carrot
- 1 Cucumber
- 1/2 head of Butter Lettuce
- 1/4 head of Purple Cabbage
- 12 Cooked shrimp
- 8 Fresh mint leaves
- 10 Fresh basil leaves
- 1/2 cup chopped cilantro
- Spring Roll Rice Paper
- Vermicelli rice noodles
For the Sauce:
- Sweet chili sauce
- Peanut butter
- Lime
- Pure Balance CBD Oil (50mg)
- Low-sodium soy sauce
- Sriracha
Directions
1. Slice your fresh ingredients.
Prep your fillings and prepare the ingredients according to how many spring rolls you plan to make. Cut veggies in thin slices so you can fill up each spring roll proportionately.
2. Soften your rice paper
Fill a large shallow dish or pie plate with an inch or so of water. Remove one rice paper wrapper from the package, and place it in the water to soak. Allow it to soak for about 10 to 15 seconds, and then remove and place on a cutting board or countertop. The rice wrapper should still feel pretty firm at this point. It will soften as it sits and as you add the filling ingredients. (If you let it soak for too long, it will tear more easily when rolled).
3. Add filling
Layer everything on the ⅓ of the spring roll closest to you. Add 2-3 of each fresh ingredient, two shrimps, some herbs, and a small pinch of noodles.
4. Wrap
Pick up the sides of the spring roll and fold them in over the toppings. Then pick up the edge closest to you and pull it up and snugly over the toppings. Continue rolling all the way up like a burrito. Try to keep all the ingredients tightly together as you roll everything up.
5. Make the Sauce
In a food processor mix together:
- 3/4 cup sweet chili sauce
- 1/3 cup peanut butter
- juice of ½ a lime juice
- 1 50mg dropper full of Pure Balance CBD Oil
- 1/2 teaspoon low-sodium soy sauce
- 1 tablespoon of sriracha
